Lobster Pasta in a Basil Pesto-Tomato Sauce Recipe

Valentine’s Day is vastly approaching and so many of my friends have been asking me for an easy but very delicious recipe to cook for their loved ones. If you are also in need of this, I am here to save the day with this lobster pasta! I wanted to create something simple but complex and full of flavor. Something that gives you the feel that you are at a fine dining restaurant, you know?

First thing that came to mind when I thought of fine dining was lobster of course. And a very easy but filling dish to make is none other than pasta. You can never go wrong with cooking pasta for any type of occasion. This pasta basically combines pesto and tomato sauce. But! We are making everything from scratch. Remember, no basicality over here! And trust me, this pasta is BANGING. I’ve honestly never had anything like it before. I’m addicted, and after making this Spicy Lobster pasta, you will be too. Sooo let’s make this dish!

Start off with two whole cooked lobsters. I bought mine from Kroger to cut down on cooking time. I didn’t have time to be fighting with a live lobster. lol But it could be a nice thing to do with your partner though. lol If you buy a live lobster, cook it for 7 minutes per pound, for the first pound. Add 3 minutes per pound for each additional pound thereafter. So if you lobster is two pounds, boil the lobster for 10 minutes.

Next we are going to extract the meat from the lobster. All of the good meat come from the tail, claws, and knuckles. There is meat in the legs too, but it’s not worth battling with. If you need a guide to help you extract the meat from the lobster, check out this video by Bon Appetit. They do an amazing job explaining it. After you extract your meat, clean off any waste, cut in bite sized pieces and store to the side.

Clean your board and cut your tomatoes in fourths.

After you cut your tomatoes, finely chop your Habanero pepper. Of course, this is optional. It brings a great flavor to the dish.

Following the pepper, roughly slice your small yellow onion.

Combine the tomatoes, onions, and pepper in a skillet with olive oil and salt and pepper.

While the tomatoes are cooking down, we are going to start on our pesto.

In your blender or processor, add your basil, parmesan cheese, garlic, pine nuts, and olive oil. Give it a good blend. Season to taste with black pepper and a little sea salt.

Your pesto should look like this. Feel free to add more olive oil or basil if need be.

Now let’s go check on our sauce. As its cooking down, start to smash the tomatoes to form your sauce.

You want your sauce to start to thicken like this. Draw a trail with your spoon in your sauce, if it is a clean trail like above. Your sauce has thickened and is the perfect consistency. If not, cook it a little longer.

Next, it is time to add in the pesto once your sauce has thickened. Stir really well and make sure the pesto is evenly dispersed.

Your sauce should look like this after you combine the two. Doesn’t it smell like heaven!?

Stir in your pasta and lobster, garnish with some fresh basil and serve!

Instructions
  1. Extract the meat of the lobster from the claws, knuckles, and tail. Clean off any waste that may be left on the lobster. Cut into bite size pieces and set to the side
  2. Chop your tomatoes, pepper, and onions and throw in the skillet with olive oil, salt & pepper. Cook on medium high heat. While cooking, smash tomatoes to create tomato sauce
  3. While tomatoes are cooking, start on the pesto. In your blender or processor add basil, garlic, olive oil, parmesan, pine nuts, and salt & pepper. Blend until it turns to a paste.
  4. Start on your pasta. Bring water to a boil. Once water comes to a rolling boil, add pasta and salt. Cook until al dente.
  5. Continue to break down your tomatoes and stir until sauce is nice and thick. When sauce is thickened, add pesto and still until evenly combine.
  6. Add pasta and lobster to sauce. Coat evenly. Garnish with basil and enjoy!
Recipe Notes
  • You can substitute chicken, salmon, or shrimp with the lobster instead.
  • The Habanero pepper is optional. Can also use a pepper on the lower end of the Scoville scale as well. Jalepeno or Serrano would work well.
