Seared Scallops with Miso Butter & Dill

  1. Rinse and pat scallops dry. Leave little to no moisture or else the scallops won’t brown
  2. Season scallops with sea salt and pepper
  3. Melt butter in a microwaveable safe bowl in 30 second increments until melted. Add miso paste and whish very well until all of the clumps have dissolved. Taste it and add more miso or butter if you would like. It the miso taste is too strong, add a little water
  4. Heat skillet to medium high heat and olive oil. Once pan is heated, add scallops to the skillet and sear for 4 minutes on one side
  5. After you flip the scallops to sear on the other side, add dill to skillet and sit in oil so the herbs can infuse with the oil and scallops
  6. With the remaining two minutes of cooking the scallops, add some of your miso butter mixture and baste the top of the scallops with the butter
  7. Once finished, remove dill from the pan and serve scallops on a plate topping it off with more of the miso butter
